• Slice cucumber into half-moons. • Thinly slice radish. • Cut tomato into thin wedges. • In a medium bowl, combine pork loin steaks, classic roast seasoning and a drizzle of olive oil.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • When oil is hot, cook pork steaks until cooked through, 3-4 minutes each side (cook in batches if your pan is getting crowded). • Remove pan from heat, then add balsamic glaze and turn pork to coat. • Transfer to a plate, cover and rest for 5 minutes.

• In a second medium bowl, combine mixed salad leaves, cucumber, radish, tomato and a drizzle of vinegar and olive oil.

• Slice pork. • Divide cucumber salad between bowls. • Top with balsamic-glazed pork. • Drizzle over dill & parsley mayonnaise to serve. Enjoy!
