• Preheat oven to 240°C/220°C fan-forced. • Cut potato into fries, then place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Spread out evenly, then bake until tender, 20-25 minutes.
Little cooks: Kids can help toss the fries!
• Meanwhile, thinly slice apple into sticks. • Place beefrump between two sheets of baking paper. Pound beef with a meat mallet or rolling pin until slightly flattened. • In a medium bowl, combine Aussie spice blend and a drizzle of olive oil. Add beef and turn to coat.
TIP: Pounding the beef ensures that it's extra tender once cooked.
• When veggies have 10 minutes remaining, heat a large frying pan over high heat with the butter and a drizzle of olive oil. When oil is hot, cook beef, turning, for 5-6 minutes (depending on thickness), or until cooked to your liking. • Remove pan from heat, then add the honey and turn beef to coat. Transfer to a plate to rest.
• Meanwhile, combine apple, shredded cabbage mix and a drizzle of vinegar and olive oil in a large bowl. Season with salt and pepper. • Slice honey-butter steak. • Divide steak, fries and apple slaw between plates. • Top with chargrilled capsicum relish. Serve with mayonnaise. Enjoy!
