Cooking Steps

• Finely chop garlic. • In a medium saucepan, heat 1/2 the butter with a dash of olive oil over medium heat. Cook garlic until fragrant, 1-2 minutes. • Add basmati rice, the water and a generous pinch of salt, stir, then bring to the boil. Reduce heat to low and cover with a lid. • Cook for 10 minutes, then remove from heat and keep covered until rice is tender and water is absorbed, 10 minutes.

TIP: The rice will finish cooking in its own steam so don't peek!

• Drain and rinse 1/2 the red kidney beans. Roughly chop tomato, cucumber and coriander. Slice lemon into wedges. Thinly slice onion.

• SPICY! The spice blend is mild, but use less if you're sensitive to heat. • Heat a large frying pan over medium-high heat. Cook onion until tender, 4-5 minutes. • Add beef mince and cook, breaking up with a spoon, until browned, 4-5 minutes. • Add red kidney beans and Louisiana spice blend and cook, stirring, until coated and fragrant, 1-2 minutes.

• Add enchilada sauce, the brown sugar and remaining butter and simmer until heated through, 1-2 minutes.

• To a medium bowl, add tomato, coriander, a squeeze of lemon juice and a drizzle of olive oil. Toss to combine and season to taste.

• Divide garlic rice between bowls. Top with saucy Louisiana beef and beans. • Top with salsa, shredded Cheddar cheese and plant-based sour cream. • Serve with any remaining lemon wedges. Enjoy!
