Quick Double Pork & Veggie Mie Goreng

with Fried Egg & Crispy Shallots

Mie Goreng - this classic noodle dish is familiar to many, although most of us have only had it straight out of the packet. Can you imagine the flavour you could achieve if you tried making it from scratch? Pork mince, egg noodles and veggies tangle together in a rich, sweet-and-savoury sauce. Add a sunny-side-up egg to pull it all together!

• Meanwhile, cut any larger broccoli florets in half. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook broccoli florets, tossing, until tender, 6-8 minutes. • Transfer to a bowl. Season to taste.

TIP: Add a dash of water to help speed up the cooking process.

• Return frying pan to high heat with a generous drizzle of olive oil. • When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to liking, 4-5 minutes. • Transfer to a plate and cover to keep warm.
