• Finely chop garlic. In a medium saucepan, heat the butter with a dash of olive oil over medium heat. • Cook garlic until fragrant, 1-2 minutes. Add basmati rice, the water and a generous pinch of salt, stir, then bring to the boil. • Reduce heat to low and cover with a lid. Cook for 10 minutes, then remove from the heat and keep covered until rice is tender and water is absorbed, 10 minutes.
TIP: The rice will finish cooking in its own steam so don't peek!
• While the rice is cooking, trim baby broccoli. Thinly slice capsicum and onion. • In a small bowl, combine mild chipotle sauce, garlic aioli and the honey. Season to taste and set aside.
• In a large bowl, combine beef mince, All-American spice blend, fine breadcrumbs and the egg. Generously season with salt and pepper. • Using damp hands, roll heaped spoonfuls of beef mixture into small meatballs (4-5 per person). Transfer to a plate.
• Heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook onion, tossing, until softened, 2-3 minutes. • Add capsicum and baby broccoli and cook, tossing, until softened 5-6 minutes. • Season to taste, transfer to a bowl and cover to keep warm.
• Return the frying pan to medium-high heat with a generous drizzle of olive oil. • Cook meatballs, turning, until browned and cooked through, 8-10 minutes (cook in batches if your pan is getting crowded).
• Divide garlic rice between bowls and top with veggies and beef meatballs. • Top with chipotle aioli to serve. Enjoy!
