• Preheat oven to 220°C/200°C fan-forced. • Grate the carrot. Finely chop celery and onion.
Little cooks: Under adult supervision, older kids can help grate the carrot.
• In a large frying pan, heat a drizzle of olive oil over high heat. Cook beef mince, breaking up with a spoon, until just browned, 3-4 minutes.
• Add carrot, celery and onion to the pan, stirring, until softened, 4-6 minutes. • Add Aussie spice blend, tomato paste, butter (for the sauce) and the plain flour and cook, stirring, until fragrant, 1-2 minutes. • Reduce heat to medium, then add garlic & herb seasoning, the milk and water and cook, stirring, until reduced, 2-3 minutes.
• Remove pan from heat, add baby spinach leaves and stir to combine. • Transfer beef filling to a baking dish.
• In a small heatproof bowl, add butter (for the pastry). Microwave in 10 second bursts until melted. • Lightly scrunch each sheet of filo pastry and place on top of the beef filling to completely cover. Gently brush melted butter over to coat. • Bake pie until pastry is golden, 20-25 minutes.
• Divide beef and hidden veggie filo pie between plates. Enjoy!
