• Drain corn (1/2 tin for 2P / 1 tin for 4P) • Heat olive oil in a frying pan over high heat • Cook beef strips, spice blend, garlic paste and corn, tossing, until browned, 1-2 mins
• Roughly chop cucumber • Slice lemon into wedges • In a bowl, combine cabbage, BBQ mayo and a squeeze of lemon juice • Season and toss
• Microwave tortillas for 10 second bursts, until warmed through • Fill tortillas with beef and corn, Cheddar, cucumber and slaw • Top with sour cream and torn coriander • Serve with remaining lemon wedges
