• Boil the kettle. Roughly chop Asian greens. Trim green beans. Drain sweetcorn. • Half-fill a medium saucepan with boiling water. Add basmati rice and a pinch of salt and cook, uncovered, over high heat until tender, 10 minutes. • Drain rice, rinse with warm water and set aside.
TIP: The rice will finish cooking in step 3!
• Meanwhile, heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook green beans and Asian greens, until tender, 4-5 minutes. • Add oyster sauce, the sesame oil and a splash of water and cook, until slightly reduced, 1 minute. • Transfer to a serving plate and cover to keep warm.
• Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil. Cook chicken strips until browned and cooked through, 3-4 minutes each side. Transfer to a plate. • Return the frying pan to high heat with a drizzle of olive oil. Cook soffritto mix, corn and diced bacon, breaking up with a spoon, until golden, 4-5 minutes. • Push bacon and veggies to the side, crack the egg into the pan and scramble until cooked through, 1 minute. • Add sweet soy seasoning and garlic paste and cook until fragrant, 1 minute. • Return the cooked chicken to the pan, and add cooked rice and the soy sauce. Cook, stirring, until well combined, 2-3 minutes.
TIP: Chicken is cooked through when it is no longer pink inside.
• Divide bacon and chicken veggie fried rice between bowls. Tear over coriander. • Serve with oyster sauce greens. Garnish greens with crispy shallots. Enjoy!
