• Thinly slice courgette into rounds. Thinly slice chilli and onion. • Transfer veggies to a large sterilized jar.
TIP: Slicing the veggies very thinly helps them pickle faster!
• To a medium saucepan, add the white wine vinegar, sugar, salt and water to a medium saucepan over high heat. • Bring to the boil over high heat and cook until sugar is dissolved, 1-2 minutes. Remove saucepan from heat and add curry powder, stirring to combine.
• Pour pickling liquid into pickle jar until veggies are covered. Top up with more boiling water if necessary. • Seal with a lid and allow to cool. Store in the fridge until ready to eat, 3-4 hours or overnight. TIP: The pickles are best enjoyed the next day!
• Serve sweet and spiced courgette pickles from fridge as desired. Enjoy!
