Thinly slice the cucumber into half-moons. Thinly slice the apple into wedges.
Roughly chop the roasted almonds and parsley.
In a medium bowl, combine the spinach & rocket mix, grated Parmesan cheese, cucumber, apple, a pinch of salt and pepper and a drizzle of olive oil.
Transfer the apple, Parmesan and rocket salad to a serving dish. Drizzle with some balsamic glaze. Sprinkle with the almonds and parsley to serve.
Microwave (900W) • Remove sleeve and pierce film in several places. • Place container in microwave and heat until piping hot, 4-5 mins. • Carefully remove from microwave and let stand for 1 min before peeling back the film. Enjoy! • Note: Do not reheat or refrigerate once heated.
Oven • Preheat oven to 200°C / 180°C fan-forced. • Remove sleeve and plastic film. • Place container in oven and heat until golden brown and heated through, 30-35 mins. • Leave to stand for 1 min and serve. Enjoy! Note: Do not reheat or refrigerate once heated.
