Cooking Steps

1
1

• Preheat oven to 220°C/200°C fan-forced. Peel kumara, then cut into fries. • Place kumara on a lined oven tray. Drizzle generously with olive oil, season with salt and pepper and toss to coat. • Add a dash of water to tray and roast until tender, 20-25 minutes.

2
2

• While kumara fries are baking, thinly slice tomato. Place your hand flat on top of each chicken breast and slice through horizontally to make two thin steaks. • In a medium bowl, combine barbecue seasoning and a drizzle of olive oil. Add chicken, season with salt and pepper and turn to coat. Set aside.

3
3

• When kumara fries have 10 minutes remaining, heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook chicken until cooked through, 3-5 minutes each side (cook in batches if your pan is getting crowded). • Remove pan from heat, then add onion chutney and a splash of water. Gently turn chicken to coat.

TIP: The chicken is cooked when it is no longer pink inside.

TIP: The spice blend will char slightly in the pan, this adds to the flavour!

• While chicken is cooking, bake burger buns directly on a wire oven rack until heated through, 3 minutes. • Slice burger buns in half, then spread base with mayonnaise. Top with BBQ chicken (plus any remaining glaze), some sliced tomato and mixed leaves. • Serve with kumara fries and remaining mayo.
