• Preheat oven to 240°C/220°C fan-forced. • Cut potato into fries. • Place fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. Bake until just tender, 20-25 minutes. • In the last 5 minutes of cook time, remove tray from oven, sprinkle with shredded Cheddar cheese and bake until golden.
• Meanwhile, heat a medium frying pan over medium-high heat with a drizzle of olive oil. Cook baby broccoli, tossing until tender, 5-6 minutes. • Transfer to a bowl and cover to keep warm.
TIP: Add a dash of water to the pan to help speed up the cooking process.
• Return frying pan to medium-high heat with enough olive oil to coat the base. When oil is hot, cook crumbed chicken breast strips, in batches, until golden and cooked through, 3-4 minutes each side (depending on thickness).
• Divide crumbed chicken strips, cheesy fries and baby broccoli between plates. • Serve with your favourite dipping sauce. Enjoy!
