Preheat oven to 220°C/200°C fan-forced. Thinly slice vintage five forks cheese. Thinly slice tomato. Cut croissants horizontally.
Place croissant bases on a lined oven tray. Divide cheese and tomato between croissants and top with croissant top. Bake until the cheese is melted, 5-8 mins.
Divide tomato and cheese croissants between plates.
FRESH TIP: Add some Dijon mustard to your croissant to serve for some extra flavour.
