• Boil the kettle. • Half-fill a medium saucepan with boiling water. • Add basmati rice and a pinch of salt and cook, uncovered, over high heat until almost tender, 10 minutes. Drain and set aside.
TIP: The rice will continue cooking in step 4!
• Meanwhile, finely chop garlic, onion and capsicum. Cut baby broccoli into thirds. Roughly chop Asian greens.
• Heat a large frying pan over high heat with a drizzle of olive oil. Cook baby broccoli, onion and capsicum until softened, 2-3 minutes. • Add Asian greens and cook until wilted, 2-3 minutes.
• Add garlic, sweet soy seasoning, ginger paste, the soy sauce and Asian stir-fry sauce and cook until fragrant and slightly reduced, 2-3 minutes. • Return rice to the pan and stir until combined and warmed through, 3-4 minutes.
• Meanwhile, in a medium frying pan, heat a drizzle of olive oil over high heat. • When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 2-3 minutes.
• Divide sweet-soy fried rice between plates. • Top with a fried egg. Tear over coriander and garnish with crushed roasted cashews. • Dollop over mayonnaise to serve. Enjoy!
