• Preheat oven to 220°C/200°C fan-forced. Cut carrot into bite-sized chunks. • Place peeled pumpkin pieces and carrot on a lined oven tray. Drizzle generously with olive oil, season with salt and pepper and toss to coat. • Spread out evenly, then roast until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
• Meanwhile, thinly slice celery. Cut chicken breast into 2m chunks. • In a medium bowl, combine shredded cabbage mix, celery, sesame oil and a drizzle of vinegar. Season to taste. Set aside. • In a second medium bowl, combine sweet soy seasoning and a drizzle of olive oil. Add chicken and toss to coat.
• When veggies have 5 minutes remaining, heat a large frying pan over high heat with a drizzle of olive oil. When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes. • Add soy sauce mix and cook, tossing, until sauce has slightly reduced, 1 minute.
TIP: Chicken is cooked through when it's no longer pink inside.
• Divide roasted veggies, celery slaw and sweet soy chicken between bowls. • Dollop over mayonnaise. Enjoy!
